Delia Smith's Chocolate Mousse
For those who missed it the first time around, I've just made this for 10 people in about 10 minutes. Don't forget the cream on top.
This is the most excellent chocolate mousse recipe by Delia Smith, my all time favourite cookery writer whose recipes always work for me. Try the Chocolate Truffle Torte as well for a dinner party dessert.
I top the chocolate mousse with whipped cream and grated chocolate. It's incredibly quick, everyone loves it and also fabulously fattening. I no longer need the recipe book to produce it - I've made it so many times.
I use a double saucepan which makes life much easier. And fold a little of the whipped egg white into the chocolate/yolk mixture to start with, then pour the whole lot into the whipped whites and fold carefully so you don't lose too much air. It will probably need to sit in the fridge for at least four hours, and will be happy if you make it a couple of days in advance.
For the Truffle Torte you'll need liquid glucose - you should be able to get it from a chemist, or at Tesco (larger stores) and you can order it online as well.
Back to the day job.
